Chicken with Cashew nuts



chicken with Cashew Nuts is a Thai dish that is full of flavour but only slightly spicy despite the chillis. There are many different variations.



Ingredients.

200g Chicken (chopped into bite size pieces)
1/2 Onion (Chopped)
Cashew nuts
Dried Chillis
Tempura Flour
2-3 tbs Mae Pranom Thai Chili Paste
1 tbs Oyster Sauce
1/2 -1 tbsSoy Sauce
1tsp Sugar

How to cook:
1.Mix the flour with some water to make a smooth paste.
2.Coat the chicken with the paste and fry until golden brown.
3.Remove the chicken from the oil and then fry the dried chili for about 15-30 seconds to make crispy and remove.
4.Fry the onions in a little oil. When soft add the chicken, cashew nuts and mix together. Then add the chili paste, oyster sauce and soy sauce.
5.Stir until everything is well mixed. Add the chili and serve immediately.

You should end up with something that looks like this. I like to garnish with fresh coriander leaf just to make it look more pretty.
